It has been a long time since I did any menu planning. We are in a very busy time in our lives and I think that having a menu planned will help us. f course, R likes to cook and sometimes he changes my menu plans because he has a craving, but whom am I to complain when someone else is doing the cooking.
  • Monday - Roasted Chicken with mashed potatoes and green beans
  • Tuesday - hopefully left over chicken with fresh squash
  • Wednesday - BBQ pork
  • Thursday - busy night, some great sandwiches and homemade chips would be good
  • Friday - homemade pizza, salad

This week is also count down to a double birthday party next weekend. Oh my, I decided to have both of the kids birthday's on the same day about half way between the two actual birthdays. This year we have a pirate theme, since Sat. Sept, 19th is Talk Like a Pirate Day.

Menu Planning Monday

I have not posted anything recently because we are sitting and waiting on my husband to be deployed. He was supposed to leave yesterday and he is still here and so we are waiting on word. Talk about nerve racking, the anxiety level is rising here. So I am going to focus on menu planning, if only for a few minutes.

Monday- Roast a chicken. Separate and make chicken salad for lunch. Add BBQ sauce and reheat for dinner tonight, SO, BBQ chicken, Baked beans, rice, and a salad. I may even have chicken left after that.

Tuesday- Some leftover chicken that is not BBQ'd. Add some peas, carrots, corn, and pasta add some mayo or Italian dressing (but not both). Bread, If Hubby is here he will probably eat the leftover BBQ chicken as well

Wednesday- Grilled pork chops

Thursday - Dance night. We pick up Chick Fil A for the kids. Hubby and I usually eat sandwiches or leftovers. he has usually eaten by the time I get home. Of course we have no idea if he will be here this week or not.

Friday - Pizza, not sure if we will make or buy.

That is our week and it is kind of nice to have that planned out since my mind will be occupied otherwise. Head over to Organized Junkie and see other Menu Planning Ideas. Have a great week.

Menu Planning Monday

I have not planned a menu in a year, but I am back to cooking in my own kitchen again. Here goes:
Monday: Italian Chicken with rice
Tuesday: Cheese and Bean Quesadillas with something else????
Wednesday: Soup, Salad, and Grilled Cheese. I have a recipe for a Mexicali Corn Salad that we may try.
Thursday: Leftovers, maybe some pizza rolls for the kids.
Friday: I want a really good hamburger, so I am not sure if we will eat in or eat out.

My kids love carrots and broccoli with ranch and we have that available for them most of the time. J and I are here during the day and eat sandwiches, soup, and cheese quesadillas. Check out Laura over at Organized Junkie to see other ideas.
